Chicken Breast with Wild Mushrooms, Gnocchi, and Creamed Spinach

Ingredients:

  • 2 bone in chicken breasts
  • 200g wild mushrooms (such as chanterelles, shiitake, or oyster mushrooms), cleaned and sliced
  • 300g gnocchi
  • 200g fresh spinach leaves
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

 

1. Prepare the Chicken:

  • Season the chicken breasts generously with salt and pepper on both sides.
  • Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  • Add the chicken breasts to the skillet and cook for about 5-6 minutes on each side or until golden brown and cooked through. Remove from the skillet and set aside.

 2. Cook the Gnocchi:

  • Bring a large pot of salted water to a boil.
  • Add the gnocchi to the boiling water and cook according to package instructions, usually about 2-3 minutes or until they float to the surface.
  • Once cooked, drain the gnocchi and set aside.

3. Make the Creamed Spinach:

  • In the same skillet used for cooking the chicken, add the remaining tablespoon of olive oil.
  • Sauté the minced garlic and chopped onion until softened and fragrant, about 2-3 minutes.
  • Add the fresh spinach leaves to the skillet and cook until wilted, about 2 minutes.
  • Pour in the heavy cream and bring to a simmer.
  • Stir in the grated Parmesan cheese until melted and well combined.
  • Season with salt and pepper to taste.
4. Cook the Wild Mushrooms:
  • In a separate skillet, heat a bit of olive oil over medium-high heat.
  • Add the sliced wild mushrooms and sauté until they are tender and lightly browned, about 5-6 minutes.
  • Season with salt and pepper to taste.

 5. Assemble:

  • Place a spoonful of creamed spinach on each plate.
  • Arrange the cooked gnocchi and sautéed wild mushrooms on top of the spinach.
  • Slice the cooked chicken breasts and place them on top of the gnocchi and mushrooms.
  • Garnish with fresh parsley and serve hot.
